Why turn off SQL and Exchange?

So when you are getting ready for a real world ptov migration why do you want to shut off SQL and Exchange? Just because it's a good idea to keep that box and quiet and static as possible as you ptov it. Thus when you are using whatever tool you decide on to pull an image or to make it virtual, just think about how you can quiet things down.
