So ya wanna do HyperV do you?
Step one buy a server that can handle it.
Use http://www.grc.com/securable.htm to see if your system is 64bit able and HyperVable
If you can do Hardware virtualization.. keep going
Now download or install Win2k8 as the base. Yes one really should look into Server core as the hyperV foundation but at 11 p.m. on a Friday night... I want full GUI. Also with Server Core you won't have a manditory IE reboot once a month. There are much much much less reboots needed with Server Core. After you install the base Win2k8, ensure that you install KB950050 to get the HyperV role installed.

Now reboot and the fun begins. Go into the server role and "Add the role" of HyperV. Reboot the box and you'll see you now get the role.

Go to the HyperV management in the Console and add a new virtual machine

Click on new...

Ensure you are setting up the memory for a SBS 2008 (and hopefully at Midnight I did that right as that would be kinda embarrassing if I can't count and gave that box too little memory)

Now there are two nic cards on this box and I let the virtual machine have access to that second nic card. Hopefully that was the right decision to make.. we'll see.

You want a harddrive of AT LEAST 60 gigs to build out a test SBS 2008

You can then install the media from an ISO on the box or from real dvd media

And off it goes....
