Starting Windows 2003 SP1, you will be able to configure SSL with your host header websites. I'm sure IIS 7.0 will support this as well, and Thomas Deml shows how to enable SSL with host headers in IIS 7.0. The catch here is the same with IIS 6.0, you need to have the same top level domain. E.g. *.yourdomain.com for all the host header websites.

Latest Port80 Software survey result shows increase usage of IIS6 web servers in Fortune 1000 websites, while latest Netcraft survey also showing overall growing trend of IIS deployment :) I can't wait to see the usage of IIS 7.0 when it release!

Ha! If you are really into IIS community, I'm sure you have heard of the name - David Wang. He is so far the best IIS blogger I know, apparently after a long silence - nothing has been updated in his old blog since August, I came across his new blog while catching up with newsgroups posting :) I don't have the detail of what's going on internally, but I wish David all the best in whatever he is working on now! and keep blogging more good stuff of IIS.
